The Dekkers Valley Revelation is aptly named. This is a very easy drinking wine. Lightly wooded with accessible fruit makes this a wine that can be enjoyed everyday. Deep ruby in colour with black fruit on the nose. This then leads onto those nice ripe black fruit flavours on the palate with a gentle spice coming through from the Shiraz. Very smooth with supple tannins.
Food Matching: This is a big wine with some spice so try this with Roast Beef or for a barbecue where it will work really well with those smokey flavours.
Grape: 52% Cabernet Sauvignon, 40% Shiraz, 8% Pinotage
Vinification: Following crushing the wine fermented on the skins for 6 days at an average temperature of 25˚Centigrade. The wine is then pressed and Malolactic fermentation induced in the tank and completed within six months. The wine was barrel matured using a mixture of 300 litre and 225 litre French oak barrels (2nd, 3rd & 4th fill only) for 12 months. The wine was only blended after barrel maturation. After blending the wine was lightly fined and racked from tank to tank. No filtering of the wine was undertaken except at bottling when a 5-micron filtration was used.
