Dekkers Valley Seraphic is a great blend of Chardonnay, Chenin Blanc and Viognier. On the nose you will find floral hints, peach & apricot blossom. On the palate it is complex with the wonderful aromatic flavours from the Viognier giving way to apple crispness from the Chardonnay on the initial palate. The full ripeness of Cantaloup melon then follows through. This all provides an integrated expression of fruit purity.
Food Matching: Dekkers Valley Seraphic is great served well chilled, around 9 degrees. Thy this with Summer Salads but also really good with Shellfish or even a Paella. Or great with good company on a balmy summer evening!
Grape: Chardonnay 67%, Chenin Blanc 24% and Viognier 9%
Vinification: The grapes are hand picked at the optimum point of ripeness and pressed. However, and rather unusually they are co-fermented to provide a fully integrated expression of the purity of the fruit. The wine is made fully in stainless steel vats and no oaking has taken place in the making of this wine.
The more traditional method for blending wine is to ferment the wines separately and then blend them together before bottling. I see this as further evidence of Mellasat’s innovative approach to winemaking.
Mellasat Vineyards was created by the Richardson family in 1996 from the original ‘Farm Dekkersvlei’ which in turn was established in 1693. Located near Paarl, in the heart of South Africa’s famous winelands just 45 minutes from Cape Town. The vineyard enjoys a spectacular position under the dramatic Klein Drakenstein Mountains together with panoramic views of the Paarl and its famous granite domes. The vineyard sits at 250 metres above sea level.
