Vinification
The vineyards are situated in Daunia in the Foggia District, Southern Italy. This is in the Puglia wine region. With around 200 hectares of old vines. Grapes are hand picked from the vines. The success of these wines are due to their outstanding value and quality. The Ortonese range is the entry level wine and benefits from great winemaking skills.
Malvasia is a group of wine grape grapes grown historically in the Mediterranean region, Balearic islands, Canary Islands and the island of Madeira, but now grown in many of the winemaking regions of the world.
Things have changed over the years and whilst Malvasia grapes are known for their connection with Italy it is now cultivated in the Adriatic, Americas, Australia and Brazil to name but a few! These grapes are used to produce white wines, occasionally dessert wines, and fortified wines.
Following the harvest the grapes are soft crushing and pressed. This is followed by slow fermentation at a controlled temperature of 18°. This is to avoid loosing those wonderful noble perfumes and aromas.
