Food Pairings Great enjoyed on its own or with good friends. It also works well with cold meat and cheese. However, the abundance of fruit allows it to stand to spicy dishes, especially curry where it has achieved almost a cult status. To get the best from this wine it should be served between 8 and 10 Degrees C.
Terroir Vines are grown in three parts of the Languedoc wine region: Mediterranean, Oceanic and Pyrenean terroirs. Clay-limestone and gravelly soils. This gives our Viognier a more complex and beautiful balance. This wine has IGP Pays d’Oc status.
Vinification The grapes are picked at night and in two passes. The first harvest is done before the grapes reach full maturity, this keeps the freshness in the wine. Then, 15 days later a second harvest is completed. This gives good concentration and varietal aromas. Grapes are destemmed and then macerated at 5°C for 6 hours. Fermentation is tempature-controlled 17°C (no malolactic fermentation).
Ageing Partial oak ageing for 15 % of the wine for 3 months in barrels that are one wine old.
